3 lbs tomatoes (half can be tinned)
1 medium onion
1 cup milk
salt & pepper to taste

Chop the onion and simmer in olive oil over a medium heat until translucent. Deseed and chop the tomatoes and add to the pot. Cook until the juice from the tomatoes covers them – approximately 25 mins. Add the milk and blend until smooth. Season.

  2. Cut the tomato in half (or quarters are maybe easier) and scoop out the seeds :)
